Lemon bars

OHHH my goodness I had to share. Made these yesterday to take care of my lemon craving. Pregnancy? I think not.. I just like lemons and had a bunch because they were on sale! These are DELICIOUS and I can't control myself around them. They were quite easy to make as well.. did it all in my Kitchenaid..except juice the lemons of course. I didn't have the butter or eggs at room temp and it turned out fine. I just cut the butter in small cubes and had my mixer do the work. I made the double recipe and I'd recommend it because it gives almost a 2:1 filling to crust ratio, just like the delectable picture above. You must try! Don't they just look so yummy? mmmmmmmmm.. I'm going to have another one.
